I have entered the local chili cookoff several years in a row. I’m at the place where I’m going to just buy a case of Stagg Chili and enter that. The judges are always drunk and I would guess that they want more liquor because the only chilis that win are ones with raw alcohol in them. Here’s the first recipe I entered several years ago. I spent a lot of money on the ingredients and it didn’t even get an honorable mention. It’s too bad because everybody that came by our booth loved the chili. It’s the time of the year for a chili cookoff. Maybe this one will win it for you. Who knows? Have fun with it!!

Rustic Chili Recipe
3 lb tri tip, cubed
2 lb ground pork
1 lb Italian sausage
1 med onion minced
1 sm can green chiles diced
3 cloves of garlic minced
1 can chicken broth
1 1/2 tsp hot pepper sauce
1-8 oz. can tomato sauce

Blend together:
2 tbsp New Mexico chile powder
2 tbsp ancho chile powder
2 tbsp chipotle powder
2 tbsp California chile powder
3 tbsp cumin
1 tsp black pepper
2 tsp salt
1 tsp sugar
2 tsp msg
1 tsp mexican oregano

Brown the meat in the bottom of the pan. Drain the fat and return to pot with veggies, chicken broth, and half the spice mix. Simmer 2 hrs. Add remaining spice mix and cook for 1 hr. adding liquid if necessary. Adjust seasonings to personal taste in the last 15 min. Chili isn’t served thickened. If you want, you can add beans of your choice. I prefer chili without beans.
